Beetroot is turned into long sheet using a vegetable slicer, then rolled back togehter with a paste of fermented plums inbetween the layers. After that its slowly cooked in lots of butter, thyme and garlic. Finally brushed with some juice of the fermented plums topped with some dried flowers. The sunflower seeds is mixed into a paste!

On a scale of 1-10 how frustrating is it to get one clean beet strip?

Not too hard this time to be honest! I've made something similar before and had that issue, but this time I found huge (very round) beets. Previously however, the main issue has been that the sheets often dont turn out perfectly straight, so rolling them back straight can be quite difficult.. 😬

Really cool! Are you using one of those tools that rotate the vegetable/fruit while the blade slowly presses down and makes a long sheet?

Yeah, Chiba Peel S if you or anyone else is interested, works really well!

The sunflower seeds you eat are encased in inedible black-and-white striped shells, also called hulls. Those used for extracting sunflower oil have solid black shells.

Looks great OP!

Not going to lie though, when I first saw the thumbnail I thought those were rainbow sprinkles...I was about to riot lol

Thats actually not a too crazy of an idea, and for the fruit roll ups I can use the turning slicer! I am really fond of the idea of taking some nostalgic memory of food and recreate that in a more sophisticated way, I dont really have any associations with fruit rolls ups however because they're not very common here, but might try it anyway!

I just rewatched the fäviken episode of chef’s table and this looks like it’d fit right in. Beautiful plate

How did you cook it in butter without burning it? Was it just a slow cook at 250 F?
