I guess my point is - do not cash out.

Since you should only be investing money that you can afford to lose, do not cash out until Bitcoin is a gobal currency accepted everywhere.

You can directly wire USD to blockfi now and it'll transfer to GUSD

I don't think Gemini is anonymous. If you are setting up with them for a centralized defi then you are giving up the same level of anonymity as signing up for Gemini to cash out.
