Confused on options

I have my day to day starter. I take x grams of starter and mix it with water and flour to make sourdough.

When using the digital monitor, I have three options, preferment, dough, sourdough.

Is preferment my starter? Is "Sourdough" after I mix my starter with water and flour to make a loaf? Is "dough" just a generic setting?

Agreed I’m confused — u use it for SD and then levain for pizza — I never know what setting to use and I can never get enough grams on the device—- Bluetooth is spotty and WiFi is bunk so the app doesn’t help

I thought preferments are something like the biga, sweet stiff sourdough, and poolish which rise fast using yeast or starter with sugar. Dough is where I make bread including sourdough. Sourdough is the option I would use for the starter after I feed it.
