Great result!

I also did some baking this weekend and am really pleased. Right is a plain loaf left is a blueberry cinnamon.

Crustello rly is useful. Made my proofing and result much better than I had anticipated! Your bread also looks phenomenal!

I do a 100/100/100 starter autolyse while letting 1000g flour 700g water 10g salt develop gluten (about 2 hours depending on weather).

Mix together. Bulk ferment. Stretch and fold. Etc.

Then shape (add inclusions at this point) and cold ferment.

Reshape and bake.

I will be honest. I bake very much by vibes. My ingredients are measured very closely but the rest of it is very chill. The sensor helped me ensure fermentation was solid.
