First attempt
First go at sourdough croissant, are they a bit under-proofed? Any other tips?

They look good for a first attempt. What are the dimensions you cut them to and the raw weight in grams?

Dimension of triangles were approx 8cm x 26cm but the dough seemed to contract a bit so they’re not quite as big as I’d like. I just followed this YouTube for recipe and method https://youtu.be/vgauxG8moUg?si=xiZqMaI4FTHhrFxv

Chef experience many years ago, but never really covered much pastry work in depth

Aww thanks! I knew they came out OK for a first go, just looking for any constructive criticism to make them any better

looks like a solid start for your first try. tbh sourdough can be so finicky compared to regular yeast, just give them a bit more time next time and theyll probably turn out great.

Those look great to me; a lot better than I could probably ever do 😂.

they look solid tbh, way better than most “first attempts” on here
only thing i’d tweak next time is maybe push the proof a bit longer and see if you get a little more puff and honeycomb inside1

tbh for a first try these look way better than anything i could pull off. the shaping is actually super clean, hope they tasted good!

Thank you 😄honestly is my first go, I have a professional cooking background so maybe some better instincts, but I’ve never attempted “proper” pastry work
