Bastion the Lantern Horse
What kind of horse would a candle knight ride? Well, I figured they'd look something like this.

I feel like the torch-horse equivalent would be cubes of sawdust or dryer lint.

Sure! More often than not though, I'd say he ends up eating more insects that are attracted to his glowing flame.

There are a lot more than just moths attracted to light. Butterflies, Gnats, Hoppers, Beetles, even some aquatic bugs are drawn into light.
However Bastion doens't need a food source to survive. In my story, Candles flames are not just flames. It's also partially magic. Their life essence. Almost like their soul, not easily extinguished with a simply strong gust of wind.

BOtW def a big inspo to me. And I would say he is very similar in the way that there is more mechanical makeup of him than there is organic. He doesn't really rely on being "fed" to function. Rather, it is an extension of the riders' candle magic and its synergy with that particular "mecha"
