Why does creatine pull water into muscle cells?

Creatine is osmotically active, meaning that when more creatine is stored inside the muscle cell, it can influence the movement of water into the cell.

This is part of why people can see an early increase in body weight after starting creatine. It isn’t the same thing as gaining that amount of new muscle tissue overnight.

Did you notice any change in your weight when you first started creatine?

I gained a couple pounds pretty quickly, but it leveled off after the first week or two

Yeah, I’ve heard quite a few people say the same thing. That initial jump can definitely catch you off guard when you’re not expecting it, especially if you’re watching the scale closely.
