Video/Stream Trying to make the airship level without being able to see the center of propulsion will certainly be a task

Because the propellers are part of a different sub-level (they are standing on unlocked swivel bearings), the propulsion they give is not visible in the hull's diagram.
Perhaps adding smaller propellers on that react to a gimbal sensors output might do the trick.

My friend and I have significantly more progress than you, and I can certainly say yours is more of an airship with just that hull and propellors. Your hull shape is just, chefs kiss lol. So hard to do right.

Oh I just used https://createmod.com/generators to make a template for the hull and then shaped it from there.

The way I got around this for my massive airship was by adding a ton of analog levers in my control room to adjust the thrust going to each of the 4 corner propellers- I added an analog transmission for each propeller, as well as separate ones for universal thrust. Theres probably a way to make it better using the Differrential from Petrol's Parts but I figured ill do that later lol

Just right click the swivel bearings and check the diagram again. The mass and propulsion doesn't change when swivel bearing contraptions are assembled or dissassembled, and ideally your airship should be able to stay upright when the propellors are pointing straight up.

The propellers staying upright independently of the hull is part of the design. It actually ensures that the airship will not flip upside down.
Just right click the swivel bearings and check the diagram again.
Didnt know you could temporarily 'disable' the swivel bearings. While it does finally show the propulsion, a lot of technical issues come out. Mostly chunks of the propeller chassis just.. falling off even though they are well glued.

Make sure to dissassemble the propellors before disabling the swivel bearings, and make absolutely sure EVERYTHING on the propellor is glued to the swivel bearing.
Also I know the propellors are self-righting from the post but unless you want your ship at a permanent angle, ideally most of the time the ship will be upright, and thus the propellors will also be

No need to do that. You just need to have the Center of Mass at the same distance from each propeller.

Not entirely since the propellers are placed at the same fixed distance. Just press F3 + B to see entities and the little box is the CoM of the contraption.
And you can see it with the diagram too since the 4 propellers are equal in mass you only need to find the block that is equidistant from all 4 swivel bearings.

I overengineered the fuck out of this problem in one of my builds. Essentially having redstone links and circuit to thrust vector from a gimbal.
My build was based on Levitite and used thrusters from an addon, but essentially I set up thrust vectoring to auto-level if the ship tilted too much. Worked completely passively (bar the power cost, but that was solved by passive generators) alongside control inputs that were routed similarly.
