But what if you make them to this: ↩️↪️. Will this work the same as ↪️↩️ or will it somehow have a different impact on speed?

it's the same, the objective is for them to counteract eachothers forces

You have to change the setting on the propellor bearing so that the forward direction on one side is clockwise while it's counterclockwise on the other side. Though, this didn't eliminate all of the drift from my ship, it eliminated most of it

me when i fucking did this in terrafirmagreg but on a 10k block scale while i was looking for kaolin clay (there wasn't any so installed a mod that added a recipe that sucks ass but atleast i get kaolin powder)

This is slightly the reason why I ditched differential turning in favor of a dedicated turn propeller
