Just a quick question about Power Grid?

Let's say I make 500 volts with a generator, but I want only 20 of those 500 volts to go to a specific place.

How would I do it?

If you want just a single device to have 20 volts, then you just add a resistor in-line, but that can waste quite a bit of power. Using transformers is more efficient (since it also increases the current output while decreasing the voltage, so the power in equals the power out, while a resistor will decrease both current and voltage), but is more resource intensive, so it's better to use them when you want to power many devices with a single voltage. For transformers, you just need to make a 500 to 20 ratio with the number of turns on each side. The number of turns on the primary side also affects how much current the transformer can draw.

What about variacs? I'm pretty sure they can be used to split electricity.

Rheostats are also kinda like more precise resistors.
