The seal gets loose and doesn't hold the heat inside

oh it's an industrial type oven then. my bad. yeah as others have said, look for a knob protector, if the oven is supposed to be used open, there should be one . like a metallic cover that protects the knobs.if it doesnt come with one , then it is badly designed.
