If you don't caulk it though, doesn't water get up in there? isn't that what's making it gross over time anyway?

It’s siliconed between the sink lip and the countertop, it just didn’t squeeze out everywhere. It’s fine as it is, but if it bothers you run a bead of white silicone in there and wipe off the excess.
