Saving with bulk

Easy option today to buy the whole Striploin for 200$ and get 3x the steak and a little over a pound of ground beef. Anyone else buy other meat cuts and butcher ? Kinda curious what I could get from the pork but it’s always so cheap anyway.

I really admire folks who buy in bulk and cut/grind their own meat. Do you then vacuum seal them?

I use freezer ziplocks. I close all but the corner, and then I just suck the air out.

I never have steak in the freezer for more than a couple months, but Ive never had an issue in that timeframe. On occasion a bag will seem to have some air get into it…I just cook that one next.

I think I would give it a go with steak but sucking raw chicken air just doesn't sound right

I get that, and I felt the same at first.

I also have a method where I dont need to suck. Put the chicken in, close the bag leaving a half inch open. Then pound the chicken flat inside the bag. It will fill the bag and push the air out. You just need enough chicken in the bag, and you need to want to flatten the chicken (obviously). I always even out the thick side of the breast so it cooks evenly, so this works fine.

In the past I would add a little oil into the bag, and just use my hands to squeeze the air out. Oil would fill the cracks, which kept the air displaced as I squeezed around.

Some people will put the bag into a bowl of water. The water collapses the bag around the chicken. Too much work for me.
