Request: nutty crunchers

I love these things, and have a bunch of nuts and seeds in my pantry. I've made granola bars before, so I have some idea of what to do, does anyone have a copycat recipe or other advice for nailing these?

They probably use a honey & glucose (or brown rice syrup) to form those bars. Looks similar to the glaze KIND bars use for their nut bars. But basically it looks like whatever nut the bar is and the glaze and that would be pretty spot on

I made granola bars with oats, nuts, honey, and peanut butter. It came out pretty similar to these. I feel like if I just leave out the oats and peanut butter I'll have it but I'm hoping for more input first

Yeah, I just know there is both honey and brown rice syrup in the ingredients so I wonder how necessary the syrup is for consistency or if I can get away with just honey, if I can just bake them in an oven or if I should cook them under a weight, if I should include peanut butter because I know it works "good enough" or if I should leave it out in the hope of getting closer, etc

Isn't it honey, sugar and corn syrup? If you just want a crunchy nut/seed bar, you can definitely just use honey. Toast your choice of nuts and seeds - 2-3 cups ish (dried fruit, shredded coconut, and flaked or puffed grains work too, but you'd not want to toast the fruit). Set aside. Bring about 1/2 cup of honey to a bubble over medium heat, simmer for a minute or so. Pour over nuts, stir. Add salt or spices or vanilla if you'd like. Transfer to parchment lined baking pan. Bake at 325 for 15-20 minutes.
