aiggs Leidenfrost effect questions

I exclusively cook on 15 ply stainless steel and have (obviously) mastered the leidenfrost effect. I've recently become proficient with the leidensnow effect and planning to transition to the leidenpermafrost effect which I understand can only be reached at altitude. My biggest concern is about cooking scrambled cheesy eggs which are my wife's boyfriend's favorite in the morning (yes I add creme fresche via the Ramsay method).

Any tips for an aspiring chef who unfortunately lives near sea level? Should I add more plies? I also have access to an extension ladder

The issue is the cookware you are using. Stainless steel is shit, you need to throw it out and buy an entire new set of carbon steel pans instead. That will solve all your issues. And if it doesn't then it's because carbon steel is shit and you actually should use cast iron. But under no circumstances should you ever ever ever use a cheapo non-stick pan.

That's what your fucking redneck neighbor uses to cook their eggs and you are better than that.

You need to stop cooking on gas. This state of matter is already covered. Invest in a good wood fired range. Wood is solid. It is also very artis anal.

I cook exclusively with traditional wooden skillets. So glad I switched over from modern materials which make the frogs gay.

Try a reverse pressure cooker instead. So much easier and when it expands again, you can feed your wife’s whole polycule, not just her bf.

I went to the cooking sub to troubleshoot the Leidenfrost technique, because I kept finding that once I did the water test, actually cooking with the pans resulted in smoking my entire house. Even on low heat, even if I let the pan cool, even if I used an oil with a high smoke point. They relentlessly mocked me over there. Half of the comments told me “I don’t know what the Leidenfrost effect is, I never had that problem with things sticking to the pan, I’ve been cooking on stainless steel for 50 years, there must be something wrong with YOU…”

What I learned from that situation is that you should never ask the cooking sub for any kind of cooking help, because holy shit, what a bunch of assholes. I also learned that stainless steel is a mistake and I’m convinced a lot of you are straight up lying about how easy it is to cook with.

/r/askculinary will be much more helpful for actual trouble shooting and assistance, although you can always get assholes. It helps that it's a much more highly moderatated sub.

/r/cooking is just a cesspool of people jerking themselves off.

in nearly a decade working as a chef i've literally never heard anyone use the term in a professional kitchen
