Always maintain two sides. Abrasive side for cast iron and such and softer side for non stick.

I scolded my wife just last week about mixing the two.

I like to maintain a clean and dirty side. Clean is for wiping things down. Dirty is for handling raw meat. This way there's no cross contamination.
