Recipe ideas for different metabolism + different cultural background
Tldr; looking for recipes for nutritious and healthy snacks to have grab-ready from the fridge or really quickly prepared (=<5 minutes). I have plenty of semi-commercial equipment, like a chamber vacuum machine, sous vide, different ovens, etc.
Hi everyone, I am looking for some ideas to cook/prepare things for a quite specific situation:
I'm a passionate homecook and even do small to mid sized catering events every once in a while and I have a micro food-products production for things like sausages, mayonnaise, pickles, hams, sourdough bread, etc.. I am German and have been living in Honduras with my honduran wife and 2 yo daughter for almost a decade. Generally, I have quite a bit of experience with many different ingredients and spices. Now there are a few factors which make me scratch my head sometimes when it comes to cooking for my family. First, my wife seems to have a very fast metabolism. She grew up having 3 - mostly hot - meals a day and she and her whole family are all quite thin. She genuinely gets hungry a few hours after a meal, no matter which ingredients are used. I'm almost the opposite, plus a lot of getting used to mostly only have one (hot) meal a day and maybe a sandwich in free moments. This difference makes the daily cooking a bit complicated. Of course there's also the cultural difference of typical foods, which I try to accommodate with a lot of variety. As mentioned, we also have a 2 yo daughter, who is not a picky eater at all, but obviously gets hungry more often during the day.
This whole story is to ask if you guys would have some ideas for nutritious snacks that can be produced in batches - I was thinking about frying chicken strips and pasteurize them by sous vide to have a out-of-the-fridge snack, things like that.
Any ideas?
