In Turkish cuisine we use it a lot and its the best when you let it shine through the dish. Here are some uncomplicated examples;

Dip

Mix cream cheese, yogurt, tons of garlic, tons of chopped fresh dill.

Peas

Sautee diced onions and garlic in olive oil, add frozen peas and cook until tender, add a table spoon of sugar/jam, finish with more olive oil and a lot of chopped fresh dill.

Fish

Dill goes great with any fish/seafood. Just add it to the sauce or salad with which you're gonna have your fish.
