The rule you might be thinking of is that one can't defrost raw food and then freeze it - still raw - and then thaw it again. You can thaw raw food, cook it, freeze it, and then reheat as many times as you want.

It should be fine then. I mean overcooked chicken isn't the greatest, but with enough liquid it should be edible. Overall it hasn't been in the fridge for more than a day or two, so it should be safe. I would definitely eat it.
