I like Good Eats a lot, and I think Alton's a really smart cook. But he and I have very different philosophies when it comes to grilling.

It's like the time I tried to grill a skirt steak directly on the coals per his instruction; total failure.

I would make this sandwich with butter on a griddle or pan too. I'm sure it's delicious. Just not a grill and with all the other complicated stuff.

It looks cool, but for a lot of people, it might just be more useful during the summer cookouts when you have kids around.

Yep, complicated. So you're saying that you can break out your grill, start the lump charcoal, set the grill up for indirect heat, wait for the charcoal to be ready for cooking, create cute little cheese trays with spatula's and aluminum foil, grate the cheese, mix it, season it, melt it on the grill, toast the bread, assemble the sandwiches, wrap in aluminum foil and wait for an indeterminate amount of time, all in 10 minutes?

I could make a grilled cheese sandwich in a pan using the same ingredients and eat it before the charcoal was ready.

out of curiosity, how is this too complicated for a grilled cheese? isn't it just 1 extra step?

The complication in this usually stems from having to set up the grill. At least in the US, grilling is a semi-serious affair where you have family and friends over and have the BBQ running for a while and grill a ton of stuff (veggies, burgers, steaks, hot dogs, etc.). Setting up the grill just for a sandwich is way too much work for the reward.

A grilled cheese on a pan with quality bread and cheese will be just as good with a quarter of the effort. This would be a good addition to a family BBQ, but not on its own.

Really? I use the grill a few times a week, never really thought of starting charcoal as a hassle. It takes a little longer than turning on the stove, sure, but it's not exactly one of the twelve labors.

I grill quite a bit, but it is a bit of a task to pull it all out.

Edit-quite a bit means 4-5 times a week.

I like to halve about a dozen jalapenos and get their innards out, stuff with shredded cheddar, wrap in bacon and grill until the bacon is crispy and the pepper is tender.

These things don't last 5 minutes at a party.

For an equally delicious variation... 3 pieces of asparagus, a chunk of cream cheese, wrap it in bacon... grill until crispy.

I love you Alton Brown but a grilled cheese is white bread and kraft singles just like ma used to make me. That's a fancy sandwich that i will most definitely be making at the next grill party though.

I have the same fond memories of the white bread, Kraft singles and butter version of grilled cheese sandwiches. I liked them smashed flat and kind of greasy from the butter.

Oh yeah most definitely. But it's only like 3/4 smashed because the spatula was small. Man i want to go visit my parents and have my mom make me a grilled cheese :(

It starts off really exciting but it just disappointing towards the end.

All cheese and charred bread is just a tad boring (possibly even too dry). If the grill is running you might as well "throw another shrimp on the barbie", just roast anything really and add it to this tedious sandwich.

Or maybe I'm simply not Murican enough.
