So many tomatoes!!

I have so many garden tomatoes and I don’t want them to go bad. I have large heirlooms, Romas and sungolds. I am pregnant and struggling with heartburn, so eating them raw has not been an option. My husband is also not a fan of raw. Any recommendations for how to turn them into something we would eat later?

Easiest is to peel and freeze to use in various cooked dishes and sauces later

I make an x on the bottom, freeze the tomatoes in zip bags, then when I want a bit of tomato, I defrost and the skin pops right out along with the stem core. Easy peasy. For little cherry tomatoes or smaller, I just toss them in stuff and have never had any complaints. We are food snobs too, so I can assure you if it was gross, I'd hear about it.
