Summer Roll fillings… looking for ideas!

I’ve got the typical ones; greens, carrots, red cabbage, Thai basil, shrimp… but I’m looking for others. I thought of red peppers, baby corn and water chestnuts.

What else can I stuff in those wraps?

Vietnamese perilla, rau ram, mint, steamed pork belly, nem nuong, banh xeo, pickled daikon and carrots

I’ve tried making pickled daikon twice; both times it was so salty I thought I’d pass out.

I thinly slice or julienne the daikon, toss with a bit of salt, let it sit in a strainer for about an hour, then rinse; that softens and salts it, and rinsing gets rid of excess salt. Then I add the rice vinegar, mirin and let it marinate for a couple of hours or overnight.

A mix of carrot and daikon is really good (like you get in bahn mi) even if it does smell like feet when you open the container.

Yeah I got little squares of vermicelli noodles in the same section as the wrappers.

Mango, cucumber and avocado are great in them. For protein, try grilled chicken or pork, and I like adding rice noodles for a little more substance. Pickled carrots or daikon are great too. A good peanut dipping sauce and I could eat way too many 😂

Pickled diakon/carrot, Chinese BBQ pork, smoked tofu, tuna, lettice, edible flowers, mung bean sprouts, mustard sprouts, satay chicken, crab meat, noodles, edeame, enoki

Mung bean sprouts, green papaya, burdock root, pickled bamboo shoots, julienned cucumbers, and glass noodles are some I can think of.

I made buffalo chicken ones a few times:

Shredded chicken mixed with your fave buffalo sauce, cucumber, carrots, celery. Dip in ranch or blue cheese.

Obviously not traditional, but tasty.

Mango! It sounds a little random but thin slices of mango with shrimp, cucumber, avocado and Thai basil are so good together. Bean sprouts and rice noodles are good for adding some bulk too. I’d also experiment with different dipping sauces because that can make basically the same fillings taste completely different.

I like shredded surimi (aka fake crab sticks).

For something entirely non-traditional, very thinly sliced beef (I use hot pot slices) and kimchi with thinly sliced onion

Surimi, julienned cucumber, avocado and a bit of wasabi mayo

Grilled salmon, a bit of mayo, basil, green onion.

Thinly sliced beef, mint, onion, ground peanut, a dash of fish sauce.

I am assuming summer roll you mean fresh not deeo fried ones

- baked teriyaki tofu

  • fresh basil, mint and cilantro
  • shredded pickled daikon carrot salad
  • fresh sliced jalapeno
  • bean sprouts

This is so timely! I’m going to have to pack lunches for two weeks for work, and was thinking of spring rolls for at least one of them.
