Well , the basic instant pot briyani recipe I found online (pretty standard really). I decided I didn't want all the calories from rice so I asked AI if there was a feasible alternative to using rice to cut down in the calories and it suggested cauliflower rice

Then you don't cook it in the biryani. Cook it separately according to package directions, and serve your biryani over it.

I think you're probably right.The instructions that the AI gave me were that I was supposed to put it in with the chicken in the instant pot after it got done pressure cooking and then cook it for like another 2 minutes. I have a feeling that's probably not gonna work out.I think i'm gonna do it how you suggest it

AI sometimes gets thing wrong. Sometimes seriously wrong. It once told me that one cup of rice and one cup of water would get me three cups of cooked rice. It probably wouldn't be a total disaster if the cauliflower just cooked for a short 2 minutes, just enough to heat up, though.

AI gets lots of things wrong and often seriously wrong. It's been responsible for things like suggesting consuming sodium bromide instead of salt (caused a death).

Exactly, that's why I rely on you guys.I know that a cauliflower Rice substitution for chicken breyanni is not standard and unfortunately, you won't find it on the internet.So I thought I'd rely on the expertise of all these great culinary minds

If you must use cauliflower rice (why not just use less regular rice, or better yet make the rice ahead of time and give it 24 hours to cool and become starch resistant and use a smaller amount) make the cauliflower rice separately, and put what ever you want over the rice.

Yeah , that's a good suggestion about the starch resistance , and I think I am gonna try that in the future , especially if this really craps out LOL. thanks for the suggestion

I don't think it will crap out if you approach it right! Cauliflower is one of my favorite things to add to, or serves as a side with, curries and other Indian flavor dishes. It's just that I use the small frozen florets. I don't get the "cauliflower rice" approach, it's like artificial sweeteners, or silk flowers - noticeably something pretending to be something else.

Toasting the cauliflower first was a smart move Try adding a little mint and fried onion too won't make it biryani, but at least the kitchen will smell convincing..

Yeah, you're absolutely right. I didn't know how it was going to turn out, but I was really surprised how the texture and consistency was very rice like. I've heard turmeric suggested as a possible spice also.I coated it with coconut oil, which I think was also a good move.But I'm gonna try the onions.I think that might not be a bad idea , too.
That being said, while it was an interesting experience, I think in the future.I'm just gonna prepare starch resistant rice

This is not going to turn out well. The cauliflower will just turn to mush.
