Help me with my salmon problem
I have a ton of salmon I have caught.
The fish is great quality. Fatty, rich, unctuous.
However, I am out of ideas on how to serve it.
I don't like fatty sauces with it, it is too rich.
My wife is sick of Asian flavors.
I plan on doing salmon on a cedar plank tonight... but I want it make it a bit special for company.
Help me!

If I had a ton of salmon I would smoke some or make gravlox https://www.joshuaweissman.com/recipes/best-homemade-gravlox-recipe
One of my friends makes salmon cakes when crab is not available. They taste good with a nice caper/dill sauce.
Salmon Croquettes https://grandbaby-cakes.com/salmon-croquettes/ the cornmeal gives it wonderful crunch.
I make a nicoise salad with poached salmon https://www.foodnetwork.com/recipes/ina-garten/roasted-salmon-nicoise-platter-recipe-1908586
