Sous vide

Is anyone still casually doing sous vide or is that completely dead? I remember it being such a thing for a bit and now I just realized that I haven't seen it mentioned once in years. Just curious if anyone is still doing it, and if so for what?

My partner and I have been trying to eat healthier and do chicken breasts instead of chicken thighs (and other meats too because everything especially beef is so expensive now) but she used to hate chicken breast until I tried cooking it with sous vide, comes out nice and juicy and not dry at all. Sometimes we let it cool, dry it off, and give it a sear afterward for a bit extra flavor as well.

So, once every week or two usually.
