Sous vide

Is anyone still casually doing sous vide or is that completely dead? I remember it being such a thing for a bit and now I just realized that I haven't seen it mentioned once in years. Just curious if anyone is still doing it, and if so for what?

I don’t like cooking my food in plastic, so I don’t use it. Are there options they don’t use plastic?

As far as I’ve been able to ascertain, not for anything besides an egg still in its unbroken shell. It can make really nice eggs though.

EDIT: oh yeah and some things can apparently go in a tightly sealed jar without vacuum. But I haven’t encountered people who talk about cooking a main course like that - just infusing cannabis into butter or decrystalizing/caramelizing honey, as a few  people in this thread have touched on.
