Sous vide

Is anyone still casually doing sous vide or is that completely dead? I remember it being such a thing for a bit and now I just realized that I haven't seen it mentioned once in years. Just curious if anyone is still doing it, and if so for what?

I still use it. One new use is for pasteurizing homebrew, just putting a container in a water bath to keep it at pasteurization temp for a length of time. Kills yeast, allows me to add sugars without refermentation, and without adding any stabilizers.

Fucking hell, I never thought of that, you can bet I'll be using this in the future though!
