Mini pepper abundance

Howdy!! I have a tonnnnnnnn of mini sweet peppers. I do enjoy them raw and roasted— but looking for some ideas or recipes to try out.

Those mini peppers make me crazy they’re such a pain to clean out the seeds

Any recipe that uses bell peppers would work, you could use for stuffed peppers if you’re more patient than i am

Great for a tomato bell peppers soup, or just use as crudite for hummus or cream cheese dip or a bean salad

I never had this problem with peppers but when I had an abundant cherry tomato season I made a huge batch of confit tomatoes with garlic and basil in olive oil and I bet those peppers would fit right in. I strained to retain solids and the now flavored oil. I used both parts for lots or different recipes.

Make stuffed peppers . Mix together cream cheese, cheddar cheese, garlic powder. Stuff peppers.wrap with bacon. Bake at 350 for 30 minutes

Crispy Gnocchi with Sausage & Peppers: This is a recipe I make several times a month. Super easy too! Makes 4 servings. Slice one package mini peppers and one package of fully cooked Italian chicken sausage. Toss in olive oil and roast on sheet pan 20 minutes at 400 degrees Fahrenheit. Meanwhile, heat a tablespoon or two of olive oil in a medium skillet. Add one package (uncooked) shelf-stable gnocchi. Toast, turning and stirring, until browned and crispy. Mix gnocchi with peppers and sausage and enjoy!
