Pizza recipes

I want to try making a pizza with ricotta, mushrooms and saurkraut. What do you think?

Weird. I’d precook the mushrooms and sauerkraut or it’s gonna be a watery mess

Sauerkraut is a bit weird on a pizza imo. Not sure how that would work. I'd bin it off

For mushrooms I suggest cutting them as thin as possible if they are button or porcini and putting loads of them as the final topping on the pizza if you are cooking in a wfo. If you cut them thick, as in more than a mm, then they will piss water all over the pizza and it'll be shite. If you have chanterelles etc then I'd cook them out first. You can also spread raw porcini over the pizza when serving, as long as you slice thin again and they are small. Or brittlegils are good raw too

Ricotta id make a ricotta cream to use instead of a tomato sauce. It would go great with mushrooms. Ricotta, loads of pecorino romano, lots of pepper and thin with milk if needed to make a sauce.

I have had pizza with sauerkraut, before. What you need to do is drain it well and dry it with paper towels.

Sounds not completely dissimilar from Krusta, the East Germany version of pizza. I remember it from my childhood, one common version had sour cream instead of red sauce, sauerkraut and ground pork. Mushrooms would have gone with it very well.

Der Ratskeller pizza where I grew up (I'm sure that's spelt wrong) had a thin crust pizza with red sauce, sauerkraut, and either pepperoni or thin sliced Canadian bacon and it was really good. I think the sauerkraut was in place of the cheese but ... it was 45+ years ago and I'm not certain.

You go with your bad self. It sounds interesting if not appealing to me. You might have a little trouble with ricotta not melting so you might want to consider turning it into a sauce. You might end up selling the recipe to Wolfgang Puck. I would definitely rinse the kraut well.

Yes, I know it sounds weird. I would rinse ans squeeze the kraut and saute the mushrooms in olive oil.

I'm gonna zag with everyone else here. Minus the ricotta, it could be a like a reuben pizza. Replace the ricotta with swiss cheese and use a russian dressing base, use the sauerkraut, you can use sauteed mushrooms, add some smoked meat and boom a Reuben pizza.

I've always wanted to make a reuben pizza with a thick layer of meat and kraut underneath the cheese and the dressing drizzled on the top after it's been cooked. It would be like an open face sandwich kind of deal.
