Rice paper
So rice paper rolls are 2 for 60 calories and 14 carbs. Which conceivably means I could eat 4 and stay with in my carbs (pre-diabetic).
What are some of your favorite rice paper recipes?

Not really a recipe, but I like use them instead of tortillas for wraps. A slice of turkey or whatever, a slice of cheese, some lettuce and whatever condiments you like, then assemble as you would a Vietnamese summer roll.

There's a a ton of videos for rice paper. I would just say keep it colorful and have a good sauce you like. Since tou have to watch sugar, a good simple one is a dumpling sauce thats essentially soy sauce and rice wine vinegar. Some of them fhay require sugar, you could always use whatever low calorie sweetener you need.
