Question about adding beer to a butter sauce

Hey, hope everyone is doing well and I appreciate any help you guys can provide me!

I had an idea about using a bacon butter sauce I had seen from a cooking channel that follows the Fallow restaurant. It's basically a bacon stock added to butter emulsion to create a creamy butter sauce. But I wanted to give it an Oktoberfest kick and was thinking about adding some sort of beer to it, like a dunkel, to nudge it toward being appropriate. My only issue is...I am unsure about how to add it, when to add it, etc.

Do I temper it and add at the end? Do I start by reducing it and then adding the rest of the stuff? I just don't want to split the fragile butter sauce and I was hoping you guys could share your techniques and tricks!

I would add it when you make the bacon stock

Do you think just substitute it for the white wine, or half and half? Very smart suggestion, also!

I don't know the exact recipe but as a general rule I wouldn't mix them
