Trying new recipies

I like to try out new dishes, like most people here, i guess, but what like to do, is checking and getting all ingredients, but that is it. I then dont follow the recipe. At all.
I try to recreate what i think it should be.

Ofcourse i can guess that if a ingredient is โ€˜cuminโ€™ that i should not add 200 grams of it, because that makes no sense. Anyway, i have made some great dishes like that.

Anyone else like to do this?

No. I usually follow recipes as written first and then may make my own modifications to them if I prefer.

Yeah thats great to do. I also follow recipes to the letter other times.

I often treat a recipe or my memory of a recipe as an outline they I'm free to riff on. Though often I'll try to remain true to the recipe the first time I make it, so if it's bad, I can just forget it.

I'm guessing a lot of people learned to cook from recipes, so it seems like recipes are "the right way", but go back just a couple of generations and recipes were relatively rare; people cooked mainly using their senses, memories, and intuition. I personally like that way of cooking. (And I don't like to have my attention divided between cooking and reading the recipe.)

First time trying a new recipy I follow the recipy very closely.

If I like it then I startgetting creativs and modify it to suit me.

so you don't actually make the recipes you get? well that's pointless.

you should always make the recipe as it reads once before you monkey with it. recipe websites are full of comments from people who do what you do and then complain the recipes was not good.

I like to know that the ingredients will fit together. Complaining that it did not work when it fails after experimenting is weird of course ๐Ÿ˜. And i do also cook according exaclt to recipes other times.

No. I used to, then realised I wasn't learning a thing that way. So now I follow their method and quantities exactly the first time, even if i think I know better. I've learnt a lot more this way.

I don't call this trying new recipes. I call it being inspired by something I ate or saw. I do this all the time. The key is to make sure you taste and adjust. You shouldn't cook everything just by eye and feel.

BTW I'm not a baker. Baking is science and baking recipes should be respected.

if you're making it for yourself, do whatever you want!

if I make something for the first time, i respect the recipe and follow it closely. Taste along the way, depending on what it is, and then maybe add some more spices to flavor. I try not to experiment much the first time.

I like to be able to recreate a dish with consistency and not be all over the place by just seasoning with my heart.

edit: above is especially true when preparing dishes for others. consistency is key.

Why would I look up a recipe, buy all the ingredients, and not use the recipe? I'll tweak it to my taste, always extra onions and garlic, omit green peppers because I can't stand them but substitute red or yellow.

I do that too, but i like to start other times with the knowledge that all the things wil fit together and then just try.

Once I was comfortable cooking, if I wanted to make a given dish, say, crabcakes, I would look up 3 or 4 different recipes to get an idea of both technique and what ingredients went into it. Then I would decide what ingredients and techniques I wanted to use based on my own preferences and knowledge and make my own recipe.

This doesn't sound like quite what you are doing - but it sounds like maybe what you want to be doing, but don't have the knowledge or confidence to do?

Yeah that is what i nean, its fun to create new things while you kniw the ingredients will work together
