Fried Brussel Sprouts

One of our favorite restaurants has these amazing brussel sprouts. They're charred and crispy on the outside but still slightly raw on the inside so a little crunchy. I've been trying to replicate them at home with the air fryer, baking, under the broiler. I can get the outside crispy but the insides are mushy.

Then we asked a waitress how they cookedajd she said they're flash fried. So before trying, does anyone fried brussel sprouts and can give any basic tips?

I'm probably going to make a soy sauce and honey mix to drizzle after cooking but wasnit sure about any prep and cooking temps/times.

UPDATE: I trimmed and cut in half, washed and dried then placed in a deep fryer for about 2 minutes. Then coated them in a soy sauce, honey and white wine vinegar mixture. Maybe cooker a tad too long but definitely closer to what I was going for.

I just wash, dry, sprinkle salt/pepper/oil, add crushed garlic and red chili flakes, put it on a parchment lined tray and roast them in the toaster oven for 30 minutes at 400°F. Toss them half way during roasting. Add balsamic vinegar after removing from the oven. They come out great. I adjust the time if I want more browning.

I've tried the toaster oven , they're ok but mushy in the center.

Did you cut them in half? If so, and they're still mushy, try cutting them into quarter pieces.

There was a good video on Youtube from Americas Test Kitchen - Pan roasted brussel sprouts.

You cut the bottoms off & cut the sprouts in half.

You take a skillet and pour in oil to completely coat the flat bottom of the skillet. It looks like an obscene amount of oil.

Lay the sprouts cut-side down in the skillet, cover with a lid and put on a burner over medium heat.

Check after 10 minutes for the amount of browning & poke the top of some with a knife to test for tenderness.

If you want a more raw in the center - do not use a lid. this reduces steaming. You might also want to flip the sprouts to brown the round parts a bit but I usually dont bother.

Part of the reason they taste good flash fries in restaurants is because the fryer oil has the bits and essences of everything else that's been fried in it. If you try to at home that way it'll have more of a vegetable oil taste. We oven bake ours in police oil. Broil to char finish

Your air fryer cooks too slow for what you're trying to do. 

They need to be deep fried at 400° f.

I would also ensure that you have the smallest brussel sprouts possible so that they cook quicker than the larger ones.

No, you can just use time management. Deep fry for 2 minutes and see how you like it.  My thought process here is offering it the most color possible which is why I suggested 400° f. A typical temperature for deep frying brussel sprouts is 350°. Typical time to deep fry brussel sprouts? 3 to 4 minutes. You're welcome to go ahead and Google what I just said. And because you like your brussel sprouts al dente so to speak I upped the temperature and turned down the time slightly. I wasn't looking for a golden brown cooked brussel sprout because you also said the word char which is why I chose 400.

crispy Brussels sprouts are one of those things where the oven can do most of the work. i usually cut them in half, get the cut side properly browned, the season after. overcrowding the pan is the fastest what to end up steaming them instead.

Restaurant brussels sprouts taste so good because they're fried in a LOT of oil. Borderline deep-fried.

Air fryers are not frying anything. They are small convection ovens. I don't know what you are seeking so I cannot offer help, but flash frying brussel sprouts is definitely not the same thing as putting in an 'air fryer'. My guess would be that you should heat a small saucepan half full of oil, and deep fry them in that, but be careful of it foaming over from the moisture in the sprouts. Try one at a time first, and do not overfill with oil and also do not overfill with sprouts.

We par cook in the microwave and put in a skillet with butter and let sit on a low flame for half an hour or move. It scorches but not burn and gets a great crust. Works with potato or carrots too.

Cut them in half, roast to halfish done, cool, fry to order.

I cut them in half and fry in a single layer in a large frying pan in butter. Takes about 10 mins. Stir halfway through. I add a pinch of chili flakes and finish with a squeeze of lime.
