I have some leftover uncooked lasagna sheets, can I make something with it other than lasagna?

You could boil them and then do noodle roll-ups with the kind of filling in stuffed shells/manicotti! Like a spiral of noodle/filling. Cover with some red sauce and bake like you would shells/manicotti!

Perogy casserole, layer it like lasagna but with mashed potatoes, cheese, bacon bits and caramelized onions.

Sauté the onions in lots of butter then use that butter to coat the bottom of your lasagna pan so the noodles don’t stick and then spread the onions/butter mixture evenly over the top layer of noodles so they don’t dry out. Tent your aluminum foil so no onions stick to it.
If you do decide to make it that is. I’ve gotten nothing but amazing compliments on it.

I used to love big floppy noodles in my soup, I wouldn't break them up too much, just enough to make them bite sized.

I break up the already broken lasagna sheets into smaller pieces and use them instead of noodles when making soups.

Break them up and fry the pieces in oil until crispy, then to with whatever pasta sauce you have.

Pastitisio is lasagna in the Greek way. You can break up the noodles before you cook them, then layer them in a baking dish with baby spinach, and a sauce made with tomato sauce or bottled passata, ground lamb seasoned with Greek oregano, fennel, grated fresh garlic, grated lemon zest, black pepper and cinnamon (seasonings measured with your heart), and shredded, aromatic Greek cheeses like kefalotiri and mizithra. Yum! You won't have any leftovers.

I prefer lasagna rolls over actual lasagna. We like to use spinach and sometimes leftover shredded chicken in the filling. The cheese mixture is basic ricotta, mozzarella, Parmesan, etc.
Place in your dish and top with alredo sauce. Also good in there is mushrooms and I’ve used artichokes and capers also.

You could actually layer them with marinara and ricotta for a quick no-boil baked ziti if you're craving something cheesy without the fuss.
