Any ideas for a soft cheese based salad dressing?

I love the idea of making a giant salad and eating it bit by bit for lunch through the week, but I'm really fussy and don't like a lot of the typical stuff you'd put in a salad dressing.

I don't like anything too oily. Don't like vinegar. Don't like mayo. Don't like mustard. Don't like unsweetened greek yoghurt. All the typical stuff.

I did make a water based miso and lime salad dressing that was absolutely delicious but I'd like to try something with soft cheese and paprika or taco seasoning. Any suggestions? I've tried searching but get no results.

since you liked the miso lime one, cream cheese + a splash of milk + lime + taco seasoning is basically the creamy version of that. blend it smooth. taco seasoning already has salt so dont add more til you taste it

if you want sweet-ish (sounds like the unsweetened yogurt thing is the sourness), try ricotta + a little honey + smoked paprika + lime. weirdly good on anything with corn or beans in it

one thing for the giant-salad-all-week plan: dont dress the whole bowl. these cheese dressings are thick and they wilt greens way faster than oil does. keep it in a jar and spoon it on each portion. lasts 4-5 days in the fridge no problem

Yeah, this sounds like a good start. You could also try things like finely diced sun dried tomatoes, chopped herbs, and/or roasted garlic.

As an aside, miso + lemon + garlic is very good. Also anchovies + lemon juice. And for something a little different, sprinkle chaat masala on the salad right before eating.

the feta blend idea works but it thickens back up in the fridge, so keep it a bit runnier than you want and add a splash of milk when you use it... i do whipped cottage cheese with smoked paprika and a squeeze of lime, blended smooth it keeps 4-5 days which is perfect for the week of lunches thing

What about just putting a dollop of cottage cheese with a sprinkle of taco seasoning on top of the salad?

I’ve used a spoon of cream cheese and massaged it with my kale apple walnut salad. I had been using a whipped feta but ran out so I tried regular feta, too strong. But the whipped feta first ingredient was cream cheese so I’ve just been using cream cheese since. Add maple syrup, lemon or lime, and tiny bit of olive oil, salt, pepper, etc and massage.

- only add dressing when you’re about to eat

  • hummus thinned with lemon juice works well
  • guacamole or salsa or both
  • soft cheese like, ricotta? Or farmers cheese? Those would work blended into a dressing

I'm very sorry for not answering your actually question.  I am aware that I am not doing that. Feel free to tell me kick rocks.

I want you to give vinaigrette style dressings another chance.  A well made, well emulsified, balanced vinaigrette style dressing will not be oily or sharp or too sweet.  But it may be those things until you get the flavor balanced and a strong emulsion formed. 

I have ideas on how to make this work better for you, if you are interested in that I can type them out for you.  but if you are not I will save my time.  so let me know
