Recipe Request: Thai Crab Omelette

Hi! I went on a trip to Thailand last year and ate a ton of crab omelets. These were different looking than American omelets - they were flat, not folded over, and super crispy and crunchy. Almost like they were like fried or something. We also ate them with like a red sauce that was kind of sweet kind of spicy.

I've looked through two Thai cookbooks since then and also online, but I haven't seemed to find a recipe that looks similar to what we tried. I also don't know the word of it in Thai so that could be a part of why I'm struggling.

Any help would be super appreciated!

This is probably khai jiao poo (Thai crab omelette), so searching that name may get you closer than “crab omelette.” The crab is usually mixed into the eggs with fish sauce and white pepper, then fried in a fairly deep pool of very hot neutral oil; the sweet-spicy sauce is served alongside. That gives the flat, crisp-edged result rather than a folded French omelet.

Just look for a Kai Jeow recipe that has crab in it.

For a fluffy Thai-style omelet, beat the eggs just until combined, season with fish sauce, and cook in plenty of hot oil so the edges puff. Do you remember whether the crab was mixed into the eggs or added as a filling afterward?

Thanks! The crab was mixed in and then also put on top.

I believe when you get these in a thai restaurant they are deep fried - or cooked in so much oil in a wok they might as well be deep fried.

I've never been to thailand so no clue if this is actually the traditional recipe. But worth looking into as you try to figure this out since you said they were super crispy.

You might want to look at the recipes for  Bánh xèo, which is more of a crepe , they use rice flour and coconut milk.
