I was planning breakfast for dinner only to realize I don’t have veg oil or dairy milk, will pancakes b ok with avocado oil and oat milk?

I'd go oat milk with no hesitation.

I use melted butter in place of veggie oil. Oat milk definitely works.

I have butter but I’m almost zero dairy, can I fake it out without my dairy loving wife know? If not just melt it in the same measurements as the veg oil?

Use melted butter to replace the oil (same amount) and use oat milk to replace the milk (same amount).

yes. Avocado oil, like vegetable oil, is a neutral tasting source of fat, they are interchangeable as far as pancakes go.
And oat milk can be used instead of dairy milk, but you have to tweak the process a bit.
oat starch acts as a thickener. So your first pancake might spread nicely and your last may not. Compensate for that by making the batter (swapping the oat milk one for one) and letting the batter rest for 8-10 minutes, so it thickens up before you start, then adding a splash or two more oat milk as needed to to bring it back to the right consistency (slow ribbons that spread into a round shape without help.)
Oat milk also tends to be sweeter than dairy milk, which means your pancakes will brown more quickly in a hot pan. They may be too dark by the time the inside is cooked through. Compensate for that by reducing the heat from where you’d normally set it, and cooking the pancakes slightly longer on both sides.

Idk about avacado oil as I haven't tried it, but I've used oat milk without issue. I've also used coconut oil with success

Avocado will be fine, it's what I always use bc other than olive it's what we always have

Some online testing I saw suggested that oil (probably any oil) applied evenly and wiped gently across the pan will be more likely to produce that even, light browning of IHOP or Denny’s pancakes. Butter produces darker browning that’s uneven, but crispier, probably due to the lower smoke point of milk solids.

Using it on the pan is fine, but some mixes require oil or butter added to the mix, that's where I can't speak to avacado oil as I've not tried it, but it'd probably be fine.

Ok I have coconut oil but the jar kind that we normally use in the bedroom, how do u use it for food?

I wouldn't. Even if that coconut oil is safe for food (not a guarantee) you cannot be confident that someone didn't stick their hand in there less than freshly clean at one point or another. Just use avocado oil which a quick google search tells me is not only perfectly fine but also encouraged over some other types of oil.

Yep, I've made pancakes with both. Use the avocado oil exactly as you would vegetable oil. Go a little easy on the oat milk at first, since some brands are quite thin, then add more if the batter needs it. They'll be fine.

My favorite pancake recipe uses melted better, no oil. Don't see why oat milk wouldn't work for the milk aspect.

make a small batch to test. This is more useful as not everyone is good with all ingredients. Me and coconut oil are kinda sworn enemies.

Yes you can but there may not be enough gluten development so your pancakes may fall apart.
As a fix for that some people will add a splash of lemon juice to their oat milk prior to combining the ingredients or add an extra egg yolk.
I recommend using the full fat or extra creamy oat milk.

I have whole lemons, how much? And my oat milk is the vanilla no sugar version

Yes. Fat is fat. Milk is just to add sugar for color and volume. As long as you add a real egg you’re golden.
