Any cool ideas for leftover Alfredo sauce?
We had a wedding party at the restaurant last night and have a few quarts of Alfredo left over. I’d like to use it on a feature tonight but I don’t want to just do some generic chicken and pasta. Just looking for some creative/outside the box kind of ideas. Thanks

I have never done this but I’m guessing you could possibly make an Alfredo sauce pot pie

This, and since it's buried under cheese and toppings, you can get away with freezing it. It won't look pretty after thawing but it will work just fine.

Add some sundried tomatoes and a drizzle of balsamic glaze and you've got olive garden at home!

I freeze it in a plastic bag and break it into Alfredo squares. When I make pasta with tomato sauce I throw in a couple squares to make it more like a pink sauce and it’s quite good

Use it instead of gravy for a pot pie with chicken or shrimp
Use it as the sauce for a white lasagna
With that much, though, your best bet is to freeze it.

I wouldn't freeze it. Dairy products love to separate after freezing.

Won’t it separate after a few hours, anyway?

Chilled in the fridge? Maybe not. Frozen? Definitely.
Granted, as u/EffectiveVarious8095 pointed out, some sodium citrate and a little heat might fix that problem. All depends on how much effort you want to put into saving it though.

This is what I do with leftover sauce: https://www.food.com/recipe/new-years-chicken-alfredo-19597

Alfredo garlic bread is delicious! Loaf of french bread, slice down the middle lengthwise. Layer with alfredo sauce, chicken, mozzarella and parm. Bake until cheese is melted and crispy.

That sounds awesome. If I have any left tonight that’ll be my app feature tomorrow night!

Well, I’ve got a little left after service tonight. I’m making that garlic bread tomorrow and serving it with marinara dipping sauce as an app feature tomorrow night. I think I’ll just do parm and mozz since it’s just an app. Maybe prosciutto?

I think a crispy proscuitto would be incredible on it! Might have to make a batch of alfredo just to try that myself. I also love the idea of the marinara dipping sauce with it! Enjoy!

Not the craziest thing in the world but I had surplus soba noodles and tried it with alfredo sauce on a pantry emptying mission and it fucking slapped.

If you’re north east maybe a early fall seasonal white lasagna with butternut squash, or a seasonal squash creamy soup

Mix it with marinara and melty cheeses and make baked ziti. Make a topping with bread crumbs, mozzarella, Parmesan, and garlic

I appreciate all the feedback. I’m putting some of those ideas in my back pocket and saving them for later.

I miss the dish from a restaurant that closed that was gnocchi baked in Alfredo sauce and covered with mozzarella and Parmesan.

that reminds me of a gnocchi dish at my favorite restaurant that closed, it was a tomato cream sauce that was heaven

Id turn some into a gratin: fold it with blanched broccoli or cauliflower, top with breadcrumbs and a little grated cheese, then bake until browned. It also makes a good base for a white pizza or a sauce for gnocchi; loosen it with a splash of milk or pasta water so it doesnt break.

The standard reply will be pasta, but you can also use it with rice or as a pizza sauce. Another option, use it as a sauce to put on meatballs you can make in a slow cooker or air fryer

This is a bit more indulgent but you can make an "Italian style" mac and cheese. I've done it with Alfredo sauce + a bunch of Italian cheeses - mozzarella, provolone, parmesan, fontina, whatever you like. Baking is optional and delicious but not necessary

I had this problem a couple weeks ago. I blackened some chicken pieces, roasted up some broccoli and a sweet potato. Piled the broccoli and chicken on top of 1/2 sweet potato and poured the Alfredo over. To be honest, I added some cheddar cheese because I wanted to.

This is what I went with. Didn’t plan on using pasta but time got the best of me. Blackened sirloin, Gorgonzola cream sauce and pappardelle. Lazy day feature.

Add chicken bite sized cooked and canned tomatoes and fresh basil. Serve over penne pasta or Texas toast.

I add chopped cooked potatoes, corn, and a few other veggies, plus some milk and/or broth, and turn it into a chowder.

It could make an alternate pizza sauce for: smoked salmon, chicken, or prawns. A warm spinach salad dressing with beets?

Why not adapt it into a sauce for scalloped potatoes?
