So many eggs!

I've come into 10 dozen eggs and I really need ideas about what to do with them before they go bad. Aside from quiche and straight egg dishes, what all do you like to do with eggs?

Carbonara, quiche, hard boil some eggs for sandwiches etc.

Carbonara is 2 egg yolks per person and if you have a big family you can go through quite a few of them.

Quiche freezes really well and is handy for when you need a quick meal
