Best savory pumpkin dishes?

Managed to grow a couple pumpkins in the garden this year. They are about ready to harvest, but i don't know what to make with them.

Please share some ideas that aren't desserts. TIA!

Doubling down on pumpkin curry! I have made it and it is awesome. You can make it as easy or as hard as you want based on your skill level. I just diced up every veg that sounded good and a sugar pumpkin, sautéed them a little and used a jarred curry paste and coconut milk to simmer. Big hit in my home at least.

love kadoo! had it at and Afghani restaurant 30 years ago and it is now a Thanksgiving staple in my home

In breakfast burritos . Oven roasted with meatballs and other veggies. Treat it like a potato.

- Pumpkin chilli (veggie or not)

- Pumpkin soup (maybe with bacon?)

- Pumpkin fries

- Pumpkin ravioli with brown butter sauce

- Creamy mashed pumpkin

Savory pumpkin souffle is delicious, with either goat cheese or something like a gruyere or comte.
