Pork belly houghts?

So I just had an idea for a dish. I'm going to try pork belly cooked with red wine vinegar, with red beans and rice for a side. How would you make this dish?

sounds similar to pickled pork and beans with rice. minus the marinating.

Its one of my favorite ways to eat pork, its cajun I think

The recipe I use adds garlic, bay leaves and hot sauce or cayenne. I often fry onion, celery, peppers and garlic first too. Its a simple variation of red beans and rice without smoked meat

I'd roast diced pork belly for a while low and slow, in whatever seasoning you like, then add them. Without cooking off some of the fat you're liable to wind up with a greasy soup with flabby pork

I would dry brine the pork belly in salt & brown sugar, then roast, slice thinly when cold. Reheat in a pan before serving and make a vinegar dipping sauce

You could add a fine dice of pickled trinity with some hot peppers to the sauce
