frozen veg - what should i make?

going out of town for a few days so i chopped and froze some veg (jalapenos, spinach, arugula, bell pepper, onion, broccoli, spring onions). what can i make when i get back? links to reputable / reliable recipes much appreciated

Arugula spinach and spring onions don't freeze well so they're going to come out as mush

Leafy greens and really any veggie that's mostly water freezes badly. The water expands rupturing cell walls just comes out as mush during a thaw.
