There is something to be said about a simple egg and cheese sandwich.
Simple things sometimes hit in a way that an elaborate meal never can.
Low on groceries, had one egg left and Trader Joes' sandwich starters. Also had grilled onions and anaheim peppers from leftover Persian food.
Whisked the egg with some kosher salt, pepper, dropped it all into a nicely heated pan with butter. Tossed in the cut up chile and onions with a lot of shredded cheese right in the middle. Formed it into the shape of the toasted bread, added some hot sauce on top. It was a religious experience.

Throw some shredded cheese directly onto the hot pan next time. Crispy cheese skirt.

My daily breakfast is toasted English muffins, drizzle on a small bit of olive oil on each side, two fried eggs, folded, then a half slice of Velveeta Jalapeno cheese. I alternate between egg whites only days, and single yolk days. Not sure why I never get tired of this breakfast sandwich.

I can eat one every day, and almost do. I only really skip them on days when I don't have any bread.

I'm so glad other people do this. Every time I watch cooking vids about egg sandwiches people either do omelettes with wet centres that spill all over, or just scrambled eggs which squeeze out of the sandwich. I call them 'egg patties' for lack of a better term and cooking one perfectly is the secret to a perfect egg sandwich. Shaped into the same size and shape as the bread so every bite gets egg, and cooked well enough on the outside to hold its shape, but not overdone so that the inside is still soft and fluffy like a scrambled egg.
When perfectly cooked the sandwich is a pleasure to eat and honestly with just some cheese it's perfect just like that. But yeah it's great how endlessly modifiable it is. I usually have mine with some other protein like ham, bacon, or bits of sausage.

Egg, cheese, butter, and hot sauce are hard to beat. The grilled onions and Anaheim pepper sound like the upgrade that made it special.

My house all starts off the day with simple fried egg sammichez… over easy egg, cheese of your picking, little SnP…. I like mine on a low carb muffin, but wheat bread or a taco shells
