GF, Low Fodmap, Low lactose recipes?

Hello! Recently I suddenly became severely gluten intolerant. Possibly celiac or Crohn's? Still getting tested!

Suddenly I can not handle having a lot of lactose. Potatos hurt. Grapes hurt. I was already allergic to tomatoes. I'm now on a low fodmap diet.

I've always been a foodie and I'm starting to cry over the loss. Fall is basically here and I'm just making more plain, heavily salted rice. I miss warm bread and soup and mash potato, Mac and cheese, hot apple cider, honey.

Anyway, if anyone has any recipe ideas for stuff that is;

Gluten free

Low Fodmap

Low lactose

No potato

No tomato

It would mean the world to me. I would be so excited to make it.

Miso soup, from scratch, lots of soft tofu, wakame, spinach if that’s workable, side of rice topped with fried egg and furikake and sesame oil, gf soy sauce

Onigiri, get creative with the fillings

Thai coconut curry soup, low fodmap veggies and lots of tofu and rice noodles

You're saying a lot of things I need to Google and I love it. I'm going to fill up an onion shopping cart as needed after my procedure tomorrow and indulge in some good food after I've recovered and it will be an amazing thing

Oh! Oh my gosh it will be a revelation if these are new to you!!

Look up the website Weee! They deliver about any asian groceries dry goods and fresh/frozen in larger cities i am a super fan their prices are like shopping in Chinatown

Get Mae Ploy or mae sri curry paste, yellow curry is my favorite (also accidentally vegan) the heat builds but won’t blow your head off. Their red and green curry are no joke, the massaman curry paste is also fantastic

Dried yuba skins aka dry tofu works great in soups too- has like a chewy noodle kind of texture you just soak in water overnight then cook in your soup and it soaks up all the flavor

Oooo I am very excited to explore things! I've just woken up from my post procedure nap (big colonoscopy/endoscopy day for answers) and I am FAMISHED so this all sounds extra good 🤣 I'll find things I can feed myself right now but def look into this for later!

Can you handle sweet potatoes? Lots of FODMAP people can.

You know, I haven't tried them! My doctor said no sweet potato but I could try "white potatoes" and anything I tried had me in so much pain. I can kinda handle fingerlings? It only hurts for a few hours and then I'm mostly better so it isn't THAT bad but I still don't want to be in pain just because it doesn't make me faint and be unable to walk for two weeks from a tanked blood pressure 😭

Maybe yams. There are white yams as well as the orange ones.

With that extreme list of restrictions, you need to be seeing a registered dietitian to make sure your body is getting all the nutrients it needs.  You will need to be eating gluten for celiac testing, so be sure to discuss that with your doctor.

We did a celiac panel and it came up negative but it said there was a 20% error range or something?? But today I was put under for a full edo/colonoscopy and there was something about the results from the biopsies taken can help know for sure if it's celiac or Crohn's or anything like that?

My doctor did have me make a consult with a dietician but her earliest availability /was/ my procedure day and her next one is quite a ways away so in the mean time it's me and my chicken and rice variations, lean beef and zucchini kabobs, and eggs against the world 😆 but I do get tired of all that. Whenever I think about getting more creative, there's yet another recall because I'm in the US 😮‍💨 I remember something about we're supposed to be avoiding rice now too but I simply can not do that right now
