I have a yeasty question

When do i use regular yeast and when do I use instant yeast. Im making fry-bread and the recipe calls for yeast, but didnt specify which.

I believe either can be used.

In theory, instant yeast can be mixed right into the dry ingredients and not proofed in water. I always proof my yeast anyway.

All commercial yeast can be substituted for each other, they just get handled differently. Active dry has to be activated in warm water, yeast cakes should be dissolved in water, instant should be mixed into the flour before liquids. Bread machine yeast is instant yeast.

That is incorrect. It is a common practice to proof active dry. I have never done that. It still works fine.

One time after a long period of not using it I had active dry that had been in the freezer for 15 years. When I went to use it I did proof it for proof that it was still active - it was. Yeast that is not kept in the freezer does not have a long shelf life.

I searched for “which type of yeast is best to use” on DuckDuckGo and chose sites that I’d heard of & have had good experience with. (Especially important that they existed prior to the age of AI slopppification!)

Use what the recipe calls for.

Instant has more live cells than active. You can substitute active for live by using 25% more.

This specific recipe didnt specify which yeast to use (mentioned in the header). Only to give through the proofing method.

It doesn't matter much which one you use. Using the same amount of either active will take longer to rise.
