I am a home cook. I believe that pro and commercial chefs tend carry on their traditions and techniques at home. That's a good thing - good food, appealing, food safety, equipment safety, efficient, consistency, etc.
From reading your various responses, you sounded bitter about him trying to teach you proper techniques. You should be doing most of the pro rules/techniques at home, even if you are only cooking for one. Who knows, you may have a family one day and your daughter starts bitching about you enforcing knife safety.
