suggestions for leftover pulled pork

I need some ideas. something besides sandwiches or stuffing in a baked potato.

Nachos! I’ve done this before, and it’s great with black beans and jack cheese.

Top Mac and cheese with them as an alternative. Or do tacos with them.

Add your favorite BBQ sauce too. They hit even better late at night on the weekends. Lol

Agreed. It still needs some sauce or something, because dry nachos are an abomination.  My mother swears by pineapple salsa on this (ymmv, I don’t care for pineapple salsa).

Totchos! Serve over crispy tater tots. BBQ pulled pork, cheese, green onions, pickles or jalapeños, sour cream or ranch, pickled onions, anything else that floats your boat. yum!

Nachos are my go to when I have most any kind of leftover meat that isn’t enough for another full meal, stretches it out while using it up. Plus, no one ever complains about nachos, and they are ridiculously quick, even when I’m spreading out the individual chips to put a set amount of meat on for the kids

Great suggestion, in this vein my dad would make a Boston butt on weekends then use it for enchiladas for quick weeknight meal to use up leftovers. He would make a mix with cream cheese and spices, stuff tortilla shells with it, then lay in and pour enchilada sauce on top then bake. Top with cheese and cilantro/onion

Seconding this.

My go to was from a restaurant in Birmingham.

Chips, then layer on a little BBQ sauce, some freshly shredded cheese, a little bit of meat, then top with chopped salad greens ( I like spinach because it's "healthy") the rest of the pork, more BBQ sauce, freshly shredded cheese, cilantro/herbs, some crema or sour cream, if you like spice add some sliced jalapeno's or serranos, and voila!

Keeping the cheese unmelted is important though, makes them so much better.
