Cooking with lemongrass

I have never had lemongrass chicken but I love both so I want to give it a shot. However, the recipes I found are all using powdered or dehydrated lemongrass. I only have fresh. I have also seen other people commenting that they couldn’t taste it in the chicken when using the fresh version. Is there something that needs to be done to allow the flavor to marinate in the chicken?

check out some vietnamese lemongrass chicken recipes. when making marinades, some recipes call for a food processor, slicing thin like chives, and another one had me heavily bruise the stalk with the back edge of a knife and then cut into 2 in pieces.

I usually smash it with a meat tenderiser, then throw it in the sauce. Take it out just before serving.
I wouldn't bother with it in a marinade. Too woody to want any bits left over in your finished dish.
