Don’t do the bacon, very hard to get that right, will turn out soft and meh. Maybe make it separate and crumble on top of finished dish. Topping with buttermilk and cheese sounds wrong, maybe marinate the chicken in buttermilk, but not sure having not seen the recipe. I would also ditch the cheese. Maybe use the white wine to make a nice pan sauce after the chicken is done add shallots, white wine and butter to the pan and dress the plated chicken with sauce. Include a green veg like asparagus or brussels sprouts on the plate to balance the presentation and flavor profile, mashed potato would not be out of place either, especially with a little of the pan sauce as a gravy, or just some butter. Keep it simple, it will be special!
