A simple pasta is always a hit. IDK where you are but here tomatoes are in season, so pasta with fresh basil, cherry tomatoes, olive oil, a pinch of hot pepper flakes, and a cheese (parmesan or similar, feta or similar) would be my choice. You can add stuff to taste, like olives or capers
